Ingredients for making spicy vegg dum biryani –
-3-4 tbsp ghee
-2 Bay leaves
-2 inch cinnamon stick
-1 star anise
-4-5 cloves
-1/2 tsp black pepper
-4-5 Cardamom
-1/2 tsp cumin
1 medium onion (finely chopped)
1 tsp ginger-garlic paste
1 small onion (grated and fried)
Vegetables of your choice
-1 cup yogurt
-1/2 tsp turmeric
– 1 tsp Kashmiri red chilli powder
-1/4 tsp cumin powder
-2 tsp Biryani seasoning
– Salt to taste
Finely chop-6 tsp coriander leaves
-10-12 finely cut mint leaves
-1.5 cup basmati rice
-2 tablespoon saffron water
-2 cups of water
How to make a spicy vegg dum biryani
To make a spicy vegg dum biryani, first soak the rice in water for 30 minutes. Now heat the ghee in the cooker and fry all the standing spices and then fry the onions. After roasting the onions add the ginger-garlic paste and fry then add all the vegetables. After roasting the vegetables a little, add yogurt to it, add all the dry spices and mix well. A little salt should also be added at this point.
Now make a layer of mint, coriander and roasted onions. Make a layer of basmati rice over it. Now make another layer of biryani seasoning, salt, mint, coriander and roasted onion. Add saffron water and 1 tablespoon ghee on it. Now add 2 cups of water to the side so that there is no difference in the layer. Bake it for 25-30 minutes. Have your biryani ready and serve it hot.
