Flour Making

When mixing the dough into the paratha, use ghee and salt in it. If you have taken a cup of flour, remember to add a little molten ghee to it. Keep in mind that ghee should not be too hot. Now add 1/4 teaspoon salt and stir the dough with the help of water. Keep in mind that you do not have to mix the dough yet. After kneading the dough, mix two to three tablespoons of water and cover with a plate. When preparing parathas, remove the tray and knead the dough with your hands for two to three minutes. Doing this will make the perfect flour.

Use of yogurt
Apart from salt and ghee, you can also use yoghurt when mixing dough, if you will. Always use fresh yogurt when doing this. When mixing the dough, add the yogurt to it. If the dough is not fully incorporated, use water. Add the whole dough. Close it now and don’t use water. After 5 to 6 minutes of mixing, use a little water on your hands. Your flour is ready to make soft parathas.

Use of baking soda-
Aside from mozzarella, you can also use baking soda to soften the parathas. For this, mix 1/4 teaspoon baking soda in two cups of flour. Now with the help of water, do the same as you combine the dough. Cover it for 6 to 7 minutes and then stir it for a while with the help of water. If you do this, the flour will be absolutely perfect and the paratha will also soften.
